Syn Free Oat Pancakes

18 weeks ago today, I joined Slimming World. I’m very much hoping that later today at my weekly weigh in, I’ve finally hit my first 2 stone (28 lbs) loss award but I won’t know until after this post has been published. Meanwhile, why don’t you tuck into some of my incredible Syn Free Oat Pancakes? Honestly, I can’t imagine a better Saturday morning brunch.

These pancakes are unbelievable. You would never know they are good for you and they are super filling too!

It’s been a long time since I had pancakes. When I started SW, eating what in essence could be described as cake for breakfast, was very far from my mind. I had gotten into a real state nutritionally speaking, and I was more than ready to ditch the baking for good (along with all the dirty, nasty, greasy takeaways I was abusing myself with) for good.

These Syn Free American Pancakes are the sweet, fluffy answer to all of your Slimming World breakfast prayers! They’re simple to make and perfect paired with fruit, syrup or even chocolate if you can spare the syns…

I think we can all agree that pancakes are one of the best breakfasts that you can possibly make. They’re a sure fire way to start your day off with a smile, and these Syn Free American Pancakes are the most fluffy and delicious Slimming World pancakes you can possibly make! 

Ingredients

40g oats (gluten free if you are coeliac)

Optional 1 – 2 tsp artificial sweetener such as Sukrin Gold

1/2 tsp baking powder

1 tsp vanilla extract

2 tbsp 0% fat Greek yogurt

2 large eggs

One-cal oil spray (rapeseed, vegetable or coconut work well here)

Instructions

Start by blitzing your oats to a powder. I make this easier by doing a whole bag of oats in my food processor so I don’t have to risk spraying the kitchen with oats thanks to wielding my stick blender when still half-asleep and hungry!

Whisk all the ingredients together really well and leave to stand for 20-30 minutes in the fridge. You may see some bubbles in the mix but don’t worry if you don’t.

Heat a nonstick frying pan over moderately high heat and spray it well with oil. Pour in little puddles of batter and cook 2-3 pancakes at a time. Don’t try to move them until the sides are set and there is an even spread of air bubbles across the surface of the pancakes. Give them a spritz with your oil and flip them over. Use two spatulas if you’re not confident doing it one-handed.

Cook for a minute or so on the other side until risen and browned then remove to a warmed plate.

Serve immediately with your favourite toppings – fat free Greek yogurt and berries are my go to but as they stand, these pancakes are Syn Free!

If you need this to be gluten free, check your oats and baking powder are both certified gluten free (the latter can contain wheat flour if it does not explicitly state it doesn’t).

Don’t forget to count the Syns in any toppings you use that aren’t Free or Speed foods. 1 tbsp of maple syrup is 2 Syns, for example.

If you like your pancakes to be thicker, then use two medium sized eggs instead of large ones.
